Fava beans are a popular vegetable that is a staple in Middle Eastern cuisine. They grow wild in North Africa and Iran. They resemble broad beans (fava beans) commonly found in Poland, but are much smaller in size.
In the countries of the Orient, they are often referred to as the “poor man’s meat” due to their high protein content, making them filling and satisfying. Rich in potassium and fiber, they also help reduce cholesterol levels in the blood, and with their low-fat content, they are a highly sought-after ingredient in weight-loss diets. Fava beans are the main ingredient in the popular Egyptian dish, Foul Mudammas, which consists of mashed fava beans or broad beans, tomatoes, and seasoned with cumin, garlic, and olive oil. Egyptians often serve it with warm pita bread, lemon juice, fresh vegetables, and herbs.
